Dim sum, Cantonese for 'touch the heart', grew up in the teahouses of Guangzhou, where travellers stopped for tea with a few small bites. The custom, called yum cha ('drinking tea'), later flourished in Hong Kong.

Neither from Jerusalem nor an artichoke: it's the tuber of a sunflower native to central North America. 'Jerusalem' is probably a garbling of girasole, Italian for sunflower.

Named after Buffalo, New York, not the animal. The Anchor Bar says co-owner Teressa Bellissimo first tossed fried wings in hot sauce there in 1964, though local chef John Young said he was frying wings in Buffalo from 1961.
