Carpaccio was created at Harry's Bar in Venice by Giuseppe Cipriani for a countess whose doctors had told her to avoid cooked meat. He named the paper-thin raw beef after Vittore Carpaccio, a Venetian painter known for his rich reds.

Named after Buffalo, New York, not the animal. The Anchor Bar says co-owner Teressa Bellissimo first tossed fried wings in hot sauce there in 1964, though local chef John Young said he was frying wings in Buffalo from 1961.
